Homemade Protein Bars
10 dates soaked in hot water
1 cup of soaked raw, unpasteurized almonds
1 cup of mixed soaked seeds/nuts (I used sunflower, pumpkin, chia, flax and a few more almonds)
1 cup oats (half ground in coffee grinder, half whole)
2 tablespoons of Almond butter
2 tablespoons of raw honey
2 tablespoons of organic protein powder (of your choice)
1 tsp each of the following: cinnamon, nopal powder, raw cacoa
3/4 cup - 1 cup coconut shredded
In a food processor blend all ingredients until a sticky, delicious mass forms (make sure to drain water from dates/seeds/nuts, that would be too much liquid)
I found them delightful and not to sweet but just sweet enough. For pickier children add another tablespoon of honey if you like.
I put them in the oven at 250 until they were firm-ish, but still chewy on a pan lined with parchment.
Cool, slice, store in fridge and try not to eat entire batch in one day!
